Thai Chicken Wraps/Delighted Magazine


Today I'm excited to share with you a recipe I created for the latest issue of Delighted Magazine!  Delighted is a beautiful quarterly publication that features fun and inspiring things from home decorating, entertaining and more.  For the Spring issue, I contributed my recipe for Thai Chicken Wraps.  What I love about these wraps are that they're bite size, which makes them perfect to serve at gatherings.  You can read more about the recipe below...

Thai Chicken Rolls with Peanut Dipping Sauce
Makes about 24 rolls

For the Sauce:
1/4 cup cider vinegar
1/4 cup Dark Brown Sugar
1/2 cup Coconut Milk
2 tbs peanut butter
1 tbs soy sauce
1 tbs peeled and minced fresh ginger
1 tsp red curry paste
1 garlic clove, minced
1 tbs of lime juice
1 tbs chopped scallions

For the Wraps:
4 whole wheat wraps
4 stalks of romain lettuce
1 lb of grilled chicken
1 red pepper
1 cucumber
1 carrot
cilantro for garnish

toothpicks or bamboo skewers


Directions
1. To make the sauce, combine vinegar, brown sugar, and coconut milk in a skillet over medium-high heat.  Next add peanut butter, soy sauce, ginger, curry paste and garlic.  Bring to a boil, reduce heat and simmer, stirring often about 3 minutes or until the the sauce is thickened and reduced.  Remove from heat then stir in lime juice.  Transfer the sauce into a small bowl, garnish with chopped scallions and set aside.

2. Slice chicken, red peppers, cucumbers and carrots into thin strips.  Set aside.

3.  Spread a tablespoon of the peanut sauce on top of a wrap.  At the bottom of the wrap, place one leaf of lettuce.  Next place the chicken, red peppers, cucumbers and carrot slices on top of the lettuce.  About 2 strips each.  Garnish with cilantro. 

4. Carefully roll the wraps from the bottom to the top.  Using a knife, slice the wrap into 2" rolls and add a tooth pick or bamboo skewer to hold in place. Serve.
